Is there anyway to get player stats displayed in a box like PAHud rather than in a single long line? I only have 4 stats displayed per player, but it takes up nearly half the table in a single long line. Hopefully i am just missing something.

If you want to position the stats individually, you can make one group for each stat and then move the boxes around by right-clicking and dragging.

Have you found the "New Line" which is under the "Special" tab? Or have I misread?
