Is there a away to get quickly back to the default columns/stats ie: remove everything blue :)
or is it a one at a time kind a thing?

You can do that - if you're sure that you want to remove all of your custom stats you can rename (or even delete, if you're REALLY sure) this file:
C:\Program Files\PokerTracker 3\Data\StatDefinitionsCustomized.pt3

Ah, on a Mac it will be, yes. :)

That's correct, yes. The file will be recreated when you import your stats.

If you export a HUD Profile it will include the stats that the profile uses.

Yes, this gets rid of all the "blue" but the name of the stats remain in my HUD set up. Had to delete those separate.

Yes, they will remain in your HUD config - this is deliberate.
