How exactly is it calculated in PAHUD? I want to create a custom stat in PT3 using this calculation. Please specify the formula.

I can't give you a "formula", but cold call is defined as calling a raise when you don't yet have money in the pot. This is the same definition as is used in PT3. IIRC PT3 counts the cold call % of opportunities to cold call.
If you have noticed a difference in the stat value, that could be because there is an error in the current build - raising when facing an opportunity to cold call is counted as a call in the cold call stats.
